PUMPKIN, SWEET POTATO & CARROT SOUP (with ginger & tumeric)

Pumpkin, Sweet Potato & Carrot Soup

Vegan

Serves approx 6-8

Ingredients:

(I use organic where possible)

½ Butternut Pumpkin

3 x Carrots

1 x small-medium sweet potato

1 x brown onion

3 x fresh garlic cloves

2-3cm cube of fresh ginger 

3 cups of vegetable stock

1 teaspoon of ground turmeric

2 teaspoons of olive oil

Coconut cream (or regular cream if preferred for serving)

ThermoMix Method:

Step 1 : Remove skin from onion and cut into quarters and add to ThermoMix Mixing bowl along with the peeled garlic and ginger. 
Place lid on and , set time to 5 seconds at speed 5 

Once finished scape the sides of the mixing bowl to push ingredients back to the bottom.


Step 2: Add olive oil and turmeric 
Place lid on and set time to 3 mins ,temperature 90°, reverse speed 1 

Once finished scape the sides of the mixing bowl to push ingredients back to the bottom.

Step 3: Add roughly chopped veggies and 3 cups of vegetable stock to the mixing bowl

Place lid on and set time to  30 mins , Temperature: Varoma, Reverse speed 1.5 

Note: do not remove lid throughout this time

Step 4: Once complete set time to 30 seconds - speed 6 

(Again, do not remove lid throughout this time)

The soup should be a nice smooth/creamy consistency. If not feel free to blitz for a further 10-20 seconds at the same speed.

 Serve with Coconut cream or regular cream and some crusty bread or toast!

Regular Stove Top Method:

Step 1: Finely Chop, onion and garlic, and grate ginger piece. Add to large saucepan on low-medium heat with a dash of olive oil to sautee for approximately 2-3 minutes while stirring.

Step 2:  Add tumeric, the roughly cut pumpkin (no seeds, or skin) as well as peeled sweet potato and carrots. Then add the vegetable stock and cover.

Step 3: Continue to cook on medium heat for approximately 25-30 minutes of until vegetables are soft, stirring occasionally.

Step 4 : Once cooked, allow to cool before using a hand held blitzer, alternatively you could use a blender and blitz it in batches until soup is a nice smooth consistency without any lumps.

Serve with Coconut cream or regular cream and some crusty bread or toast!
